American Style Pancakes With Bacon, Popcorn and Maple Syrup

Ingredients
Dry
135g self raising flour
2 tbsp caster sugar
1 tsp baking powder
Wet
135g milk
1 egg
Pinch of salt
Cooked smoked streaky bacon
Maple syrup
Popcorn kernels
Coconut oil
Method
- Start by roasting off the streaky bacon.
- In a pan, add your coconut oil and popcorn kernels and leave to pop away.
- Mix together your dry ingredients, add your wet ingredients and whisk until combined.
- In a warm pan, add some oil and some butter and add the pancake mixture.
- Cook until golden, adding some bacon fat for extra flavour.
- Add the popcorn on the side and bacon on top of the pancake stack, drizzle over some maple syrup and enjoy!
