A delightfully playful drink with an edge of summery sophistication. Really elegant and zingy, this cocktail is the perfect way to enjoy a sunset.

Ingredients

100ml lime juice, plus 1 whole lime to garnish 
150ml Ocean Spray ™ Cranberry Classic 
50ml peach schnapps 
1 egg white (or 2 tbsp aquafaba if you don’t want to use egg) 
Handful of ice 

Method

  1. To make your garnishes, peel two strips of lime, each one around 6cm in length. Trim to 2mm in width. Twist around a chopstick to form a ringlet shape and set aside, leaving them loosely around the stick.
  2. Put the cranberry juice, peach schnapps and egg white into a cocktail shaker, fix the lid of the shaker tightly and shake for 15 seconds. Shaking without ice allows the egg white/aquafaba to form a frothy texture.
  3. Add the ice to the shaker, replace the lid and shake again for 20 seconds (or until your hands can feel the cold). Strain into Nick & Nora cocktail glasses and grate some lime zest over the top. Add the lime ringlets to the rim of the glasses and serve.
